Breakfast Berry Granola Coffee Cake

Nothin' says "summertime" quite like berries. Blueberries, blackberries, raspberries, strawberries - I love them all. I wanted to make a berry coffee cake for two reasons: (1) I just bought a gorgeous Fiestaware© 9x13 rectangular baker, and (2) our family went berry picking over the weekend. Here is one way to combine two breakfast favorites: berries and granola.


Breakfast Berry Granola Coffee Cake

Coffee Cake
1 ½ cup unbleached white flour
1 ½ cup whole wheat flour
1 ½ tsp baking soda
1 tsp salt
2 cups granulated sugar
1 ½ sticks butter or margarine, softened
3 large eggs 
2 tsp vanilla extract 
1 ½ cup buttermilk
1 ½ cups mixed berries **
** I used blackberries and blueberries 

Granola Streusel
1 tsp cinnamon
¾ cup all-purpose flour
¾ cup packed brown sugar
6 Tbsp cold butter
2 cups granola
½ tsp vanilla



Instructions
Heat oven to 350° F. Generously grease a 9x13 pan. While we're on the subject, let's talk about pans for a minute. The pan that I bought has a 1 inch rim, so I wasn't worried about batter spilling over. If you are using a regular glass 9x13 pan and are worried about batter spilling over as it rises, then you can remove about 1/4 - 1/3 cup of batter.

For the granola streusel
Combine the cinnamon, flour, and sugar in a bowl. Add butter slices to flour/sugar mixture. Using a pastry cutter or two knives, cut the butter into the flour mixture until small chunks are formed. Add the granola and vanilla and thoroughly combine. Refrigerate until needed.

For the cake
Combine and stir unbleached white flour, whole wheat flour, baking soda, and salt in a bowl. Set aside. Cream together butter (or margarine) and sugar until fluffy, about 2 - 3 minutes. Add eggs one at a time stirring well after each. Add vanilla extract. Add flour mixture and buttermilk, alternately, beginning and ending with flour mixture and stirring well after each addition. Carefully fold in berries, stirring as little as possible. I used blueberries and blackberries and the blackberries were definitely messier than the blueberries. Pour into baking pan and spread batter evenly in pan. Sprinkle granola streusel on top of batter. Bake at 350° F for about 55-60 minutes. Cool completely before serving. Top it off with your favorite yogurt.
