Chocolate-Cinnamon Swirl w/Cinnamon-Vanilla Glaze

Chocolate, cinnamon, and vanilla - the holy trinity of baking. OK, maybe that's taking it a little too far, but nonetheless, these three delights work well alone, or in combination. This coffee cake is an easy answer to the question, "What am I going to serve for breakfast when I have guests?"


Chocolate-Cinnamon Swirl w/Cinnamon-Vanilla Glaze

Coffee Cake
1 ¼ cup unbleached white flour
1 ¼ cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 ½ cup sugar
¾ cup butter, softened
3 eggs
¾ cup sour cream
4 Tbsp milk
1 ½ tsp vanilla

Swirl
½ cup sugar
1 Tbsp cocoa power
1 Tbsp cinnamon
⅓ cup walnuts (optional)

Glaze
½ cup powdered sugar
2 tsp cinnamon
1 tsp vanilla
2 - 4 Tbsp water



Instructions
Heat oven to 400° F. Generously grease a 10 inch bundt pan.

For the cake
Combine unbleached white flour, whole wheat flour, baking soda, baking powder, and salt in a bowl. Mix thoroughly and set aside. In a separate mixing bowl, beat sugar and butter until fluffy. Add eggs one at a time mixing well after each. Add sour cream, milk and vanilla. Add flour mixture and mix thoroughly.

Why the sour cream and the milk? Well, we had tacos the night before and a few tablespoons of sour cream went on the tacos. Sooooo, I had to add a little bit of milk to the batter. Many sour cream coffee cake recipes will call for 1 cup of sour cream, so you can omit the milk and increase the ¾ cup of sour cream to 1 cup.

Pour half of the batter into the greased bundt pan. Spoon swirl ingredients onto batter in pan. Add remaining batter on top of swirl. Bake at 400° F for 10 minutes. Reduce heat to 350° F and bake for an additional 40 - 45 minutes. Cool in pan 10 - 15 minutes before removing from pan. You can serve this cake warm or wait for it to cool.

For the swirl
Combine all ingredients in a bowl and set aside. I like alot of cinnamon to the point where it has a spicy taste. If you just like a hint of cinnamon, or you don't like spicy per se, then reduce the cinnamon to 1 - 2 teaspoons.

For the glaze
Combine all ingredients in a bowl and mix thoroughly. Drizzle glaze on cake.
