Granola Bar Coffee Cake

This coffee cake is a variation of the Coconut Coffee Cake w/Chocolate Icing. I like granola bars that have chocolate chips and coconut in them. So, I used the basic cake recipe from Coconut Coffee Cake and I tweaked the topping. While I don't necessarily think that granola bars are healthy, I do enjoy them every so often with yogurt. I think a dollop of Greek yogurt would be perfect with this cake.


Granola Bar Coffee Cake

Coffee Cake
1 cup unbleached white flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
¾ cup sugar
1 stick butter or margarine, softened
2 eggs
1 cup sour cream
¼ cup milk
1½ tsp vanilla extract

Topping
3 Tbsp butter, cold, cut into small pieces
¾ cup brown sugar
¼ cup flour
½ cup granola
½ cup sweetened flaked coconut
½ cup chocolate chips
¼ cup raisins


Instructions
Generously grease a 9x9 pan. Heat oven to 350° F.

For the topping
In a bowl, combine butter, brown sugar, and flour. Using a pastry cutter, cut butter into flour/sugar mixture until pea-sized crumbs form. Add granola (I used store bought), coconut, chocolate chips, and raisins. Stir thoroughly. Set aside.

For the cake
Combine unbleached white flour, whole wheat flour, baking soda, baking powder, and salt in a bowl. Mix thoroughly. Set aside. In a separate bowl, beat sugar and butter until fluffy. Add eggs one at a time, stirring well after each. Add sour cream and milk. Stir thoroughly. Gradually add flour mixture and stir until well combined. Add vanilla extract and stir. Pour into greased pan and spread evenly. Sprinkle topping. Bake for 50-55 minutes. Cover cake with foil during the last 15 minutes of baking. Remove from oven and cool completely.
