Triple Almond Coffee Cake

Instead of plain ol' vanilla, it's plain ol' almond - times three. Almond extract, almond paste and of course, almonds give this cake it's almond flavor. If you don't have almond extract, go ahead and use vanilla. Notice that the topping will actually go into the bottom of the pan since it's a bundt pan. Because the sugar in the topping will be extra gooey, make sure that the pan is well greased.



Triple Almond Coffee Cake

Coffee Cake
1 ¼ cup unbleached white flour
1 ¼ cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
¾ cup sugar
6 Tbsp butter or margarine, softened
2 eggs
½ cup sour cream
1 cup milk
1 tsp almond extract

Filling
4oz almond paste
1/2 cup sliced or chopped almonds

Topping
¾ cup brown sugar
3 Tbsp butter
¼ cup flour
1 cup sliced or chopped almonds


Instructions
Generously grease a 10 inch bundt pan. Heat oven to 350° F.

For the topping
Combine brown sugar, butter, and flour in a bowl. Using a pastry blender, cut butter into flour and sugar mixture until pea-sized chunks form. Add almonds and combine. Sprinkle mixture evenly into bottom of greased bundt pan. Set aside.

For the filling
Chop almond paste into small chunks. Combine almond paste and almonds. Set aside.

Sliced almonds would be the prettier option. However, since I had a bag of whole almonds that I recently got from Costco, I just chopped up some of them and used chopped almonds.

For the cake
In a separate bowl, combine wheat flour, unbleached white flour, baking powder, baking soda, and salt. Set aside. In a mixing bowl, cream together butter and sugar until fluffy.

If you want a sweeter cake, then increase the sugar to 1 cup. I purposely used less sugar as the almond paste can be quite sweet.

Add eggs one at a time stirring well after each. Add sour cream and stir thoroughly. Add milk and flour mixture alternately beginning and ending with flour mixture. Add almond extract and stir. Pour half of batter into bundt pan over topping mixture. Sprinkle almond paste filling over batter. Pour remaining batter over filling. Bake for 55-60 minutes. Cool in pan 10 minutes. Remove from pan and cool.
